Mama Nina's Peanut Clusters

I never thought I'd be sharing this recipe. Because...Well...it's just so darn, embarassingly easy.

When anyone asks for the recipe I sort of shuffle, and hem and haw and glance away. Always promising to share. But I never do.

But here it is...Mama Nina's Peanut Clusters. Suitable for all gift giving, for dressing up and taking to a party...for your family...teachers...neighbors...friends...yourself. I got this recipe, much like I do so many of my recipes, from family. From my sweet mother-in-law in fact, Nina Field. My hubby loves these. (Don't tell him I said this, but if I don't wrap them up tight and hide them, he'll eat them two and three at a time until they're all gone!)

Best of all, I keep them in the freezer during the holidays for quickie last minute gifts. (Like that surprise visit from a neighbor who never brings you anything during the holidays but lo and behold this year has a fruit cake!)  I just pre-package them in cello bags with a bow and tag and they're always ready to go!

Mama Nina's Peanut Clusters
1 pound white almond bark
12 ounce bag semi-sweet chocolate chips
1 pound Spanish salted peanuts or cashews
Melt the almond bark in the top of a double boiler. Add the chocolate chips. Stir until completely melted together. Stir in peanuts. Drop by spoonfuls onto waxed paper. Allow to cool and harden. Enjoy! (Note: I've tried using all chocolate almond bark but it's just not the same. Trust me!)

Too easy, right? And to dress them up even more melt white chocolate and drizzle across, or dark chocolate, or even caramel with a little sprinkle of fleur de sel for that touch of salted caramel flavor. Sometimes I even sprinkle them with the red/green/white sprinkles. So fun to play with!
On the left is peanut clusters drizzled with white chocolate.
On the right is cashew clusters drizzled with dark chocolate.

I got these cute boxes at Big Lots.

The two different types are packaged individually in
cello bags, labelled, and popped in the box.

Add a personalized  tag and a ribbon, and voila! Easy!

Trust me. People will ask in wonder if you made these. And you will shuffle, and hem and haw and glance away...You might also want to check out this recipe for another easy home baked gift!

Enjoy!
Cathy

PS: At this busy time of year, when you're feeling so stressed, please take time to smell the lavender. Inhale it...breathe it in...let it weave its special magic. All is calm. All is bright. All is good. Be merry! : )
